Classic American Apple Pie

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter (cold, cut into cubes)
  • 1 tsp salt
  • 1 tsp sugar
  • 6-8 tbsp ice water
  • 6-7 cups apples (Granny Smith, Honeycrisp, or a mix, peeled and sliced)
  • ¾ cup sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 egg (beaten for egg wash)

Instructions:

  1. Prepare the Pie Crust:
    • In a large bowl, mix flour, salt, and sugar.
    • Add cold butter cubes and cut them into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.
    • Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
    • Divide the dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
  2. Prepare the Apple Filling:
    • In a large bowl, toss the sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice until well combined. Let sit for 15 minutes.
  3. Assemble the Pie:
    • Preheat oven to 425°F (220°C).
    • Roll out one disc of dough on a floured surface and transfer it to a 9-inch pie dish.
    • Add the apple filling to the pie crust.
    • Roll out the second disc and cover the pie with it. Trim any excess dough and crimp the edges to seal.
    • Cut small slits on top of the pie for steam to escape.
    • Brush the top crust with beaten egg.
  4. Bake the Pie:
    • Bake at 425°F for 20 minutes.
    • Lower the temperature to 375°F (190°C) and bake for another 35-40 minutes until the crust is golden and the apples are tender.
    • Let the pie cool for at least 2 hours before serving.
