Ingredients:
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter (cold, cut into cubes)
- 1 tsp salt
- 1 tsp sugar
- 6-8 tbsp ice water
- 6-7 cups apples (Granny Smith, Honeycrisp, or a mix, peeled and sliced)
- ¾ cup sugar
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp lemon juice
- 1 egg (beaten for egg wash)
Instructions:
- Prepare the Pie Crust:
- In a large bowl, mix flour, salt, and sugar.
- Add cold butter cubes and cut them into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
- Divide the dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
- Prepare the Apple Filling:
- In a large bowl, toss the sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice until well combined. Let sit for 15 minutes.
- Assemble the Pie:
- Preheat oven to 425°F (220°C).
- Roll out one disc of dough on a floured surface and transfer it to a 9-inch pie dish.
- Add the apple filling to the pie crust.
- Roll out the second disc and cover the pie with it. Trim any excess dough and crimp the edges to seal.
- Cut small slits on top of the pie for steam to escape.
- Brush the top crust with beaten egg.
- Bake the Pie:
- Bake at 425°F for 20 minutes.
- Lower the temperature to 375°F (190°C) and bake for another 35-40 minutes until the crust is golden and the apples are tender.
- Let the pie cool for at least 2 hours before serving.
