Ingredients:

  • 6 large russet potatoes, peeled and cubed
  • 1 cup sour cream
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 2 cups shredded cheddar cheese (divided)
  • 6 strips bacon, cooked and crumbled
  • 3 green onions, finely chopped
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the potatoes:
    In a large pot, boil the cubed potatoes in salted water for 15-20 minutes, until fork-tender. Drain and transfer to a large mixing bowl.
  3. Mash the potatoes:
    Mash the potatoes with the sour cream, milk, and melted butter until smooth and creamy. Season with garlic powder, onion powder, salt, and pepper.
  4. Mix in the toppings:
    Stir in half of the shredded cheddar cheese, crumbled bacon, and half of the chopped green onions.
  5. Assemble the casserole:
    Spread the mashed potato mixture evenly into the greased baking dish. Top with the remaining shredded cheese and crumbled bacon.
  6. Bake:
    Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  7. Garnish and serve:
    Remove from the oven and sprinkle the remaining green onions on top. Let the casserole cool slightly before serving.

Tips:

  • You can also add a dollop of sour cream or extra bacon bits on top before serving for added flavor.
