Ingredients:
- 4 large bell peppers (any color)
- 1 lb ground beef (or turkey)
- 1 cup cooked rice (white or brown)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded mozzarella or cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Prep the Peppers: Preheat your oven to 375°F (190°C). Cut off the tops of the bell peppers and remove the seeds and membranes inside. Drizzle a little olive oil over them and place them upright in a baking dish.
- Cook the Filling: In a skillet over medium heat, cook the ground beef or turkey until browned. Add the diced onion and garlic, and sauté until softened. Stir in the diced tomatoes, cooked rice, salt, and pepper. Let it simmer for about 5 minutes.
- Stuff the Peppers: Spoon the beef mixture into the bell peppers, packing it firmly. Top each pepper with shredded cheese.
- Bake: Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve: Garnish with fresh parsley and serve warm.
Tips:
- Customizable: You can swap the ground beef for turkey, sausage, or a vegetarian option like quinoa or beans.
- Add More Flavor: Mix in some chopped spinach, corn, or black beans to the filling for a more hearty meal.
